With the birth of Emily’s newest, we were both reminded of the blessing of friends who bring meals to moms after they bring home a new baby.   It’s a beautiful work of mercy and one we have experienced and appreciated receiving ourselves.  I couldn’t resist sharing this picture (above) when Fr. Leo Patalinghug made homemade pizza in my backyard pizza oven when in town for a marriage retreat. Fr. Leo’s work at Grace Before Meals reminds us of the importance of family mealtime, and that is a great gift you can give a new mom by bringing her a hot meal!

Often I’m at a loss for a tasty yet uncomplicated (and not too expensive) meal to bring to another family.   We decided we’d share some recipes with you that are family favorites and sure to be a hit when shared with another family!  (I didn’t share my pizza recipe, but you can get it here)  We hope to provide you with many new options and if you have a recipe that makes a great meal to share, please email it to us!

Michele’s Chicken Bowl

2 lbs of boneless skinless chicken breasts or thighs

1 jar chicken gravy

1 package frozen corn

6 cups mashed potatoes (or buy Bob Evans premade mashed potatoes)

Place chicken in slow cooker and cook on high for 4 hours.   Once cooked through, pull apart into shredded chicken.   Add one jar chicken gravy and turn crock pot down to low.  Heat until warmed.   While warming the gravy, make mashed potatoes or heat up the premade potatoes.   Warm frozen corn.   Place mashed potatoes in bottom of the bowl, top with chicken and gravy and sprinkle corn on top.   If desired, add cheese.   Serves 6.

Easy Chili

1 lb ground beef or turkey

1 package taco seasoning (yes, I meant to write taco, we like it better than the chili seasoning)

1 can black beans

1 can chili beans

2 cans diced tomatoes

Brown ground beef or turkey and add to crockpot.  Add taco seasoning, beans and diced tomatoes.  Mix together.   Cook on low for 4-6 hours.  Serve with cheese, oyster crackers or tortilla chips. (We also like to put a little cream cheese in the bottom of one bowl, top with chili and add cheese for a “chili cheese dip”)

Jamaican Jerk Chicken

3 lbs boneless skinless breasts

One jar Walkerswood Jamaican Jerk Seasoning (hot & spicy)

Spread one tsp Walkerswood Jamaican Jerk Seasoning (Hot & Spicy) between the three pieces (its very spicy, so stick to the 1tsp unless you want it really hot!!)  Layer 3 boneless skinless chicken thighs in bottom of crockpot.  Repeat process until the

Cook on high for 4 hours.   Shred the chicken and serve on pitas or rolls.   Add sauteed onions and peppers for a little extra flavor and enjoy!
